Broccoli Paratha Step by Step Recipe|How to make Broccoli Stuffed Paratha

Extremely fussy! My kids don’t like Broccoli and if given to them in the form of stir fry or roasted veggie they will not touch it and eat up rest of the veggies in their plate. For them I till date have to play smart and make them eat such healthy veggies. This Broccoli Paratha is one such recipe that came out due to their craziness. But to my delight, both of them loved Broccoli Paratha, a simple No Onion No Garlic Recipe and it became a hit. Sometimes us Mom’s have to be really over smart to feed our kids.

It’s simple to make Paratha and not too complicated. I haven’t sauté the broccoli but simply washed and grated it in the food processer. Though many people cook the broccoli for few minutes in little oil and then do the filling but I prefer simply making this paratha like I make my Gobi Paratha. You can add in chopped onions in your stuffing along with the grated broccoli but I avoided it because I wanted my kids to have just the broccoli in the paratha.

I have tried to capture all the steps to make it easy for you to understand how to make this paratha and for that matter any other stuffed paratha. So just follow the steps and you will be ready with a healthy & delicious Broccoli paratha in no time and your loved ones will surely relish this. But ensure the dough is kneaded correctly and is not too sticky nor too hard. Apply oil in your palms while giving the final pressure to your dough as it will make the dough soft.

Ingredients
  • For the dough -
  • Atta/ wheat flour 1 cup
  • Oil - 1 tblsp or little more
  • Salt to taste - I used approx. 1/2 teaspoon for the dough
  • Water as required
  • For the Stuffing -
  • Broccoli, grated 1 & 1/2 cups
  • Giner Garlic paste - 1/2 teaspoon
  • Red chilli powder 1/2 teaspoon
  • Garam masala powder 1/2 teaspoon
  • Salt as required - I added approx. 1 teaspoon

Instructions
  1. Prepare the Dough using luke warm water approx. 1/2 cup or you can adjust it accordingly to reach a smooth soft dough.
  2. Now keep this aside and grate the broccoli using a grater, I used my food processor for it.
  3. Once the broccoli are grated add salt and keep it aside for few minutes.
  4. It will leave water, squeeze the broccoli in your palms tightly and remove water.
  5. Now add in little salt more to it as per taste along with rest of the dry spices.
  6. Your stuffing is ready.
  7. For the parathas, make a small ball from the dough and roll it to make a circle on the rolling pin.
  8. Dust some flour on it and add the stuffing as shown in the pic.
  9. Now add little dry flour on top of the stuffing before closing the ball, this we do so that the stuffing does not loosen while rolling it. Dry flour absorbs the wetness in the stuffing and it does not break while preparing the paratha.
  10. Now gently close the stuffed dough ball closing it in the centre, refer the pic.
  11. Softly start rolling the paratha with light hands in between dusting it with the flour on both the sides.Do not over dust it too.
  12. Make a circle. Once done then heat the tawa until hot.
  13. Now cook the rolled out paratha on the tawa from both the sides. when it is half cooked then dizzle it with oil and press it a little to make a crispy paratha.
