           Swang ke Chawal with Aloo ki Sabzi – vrat ka khana Navaratri Special


A full meal in itself during the fasting days, this is  a delicious recipe. Not difficult to prepare at all and taste good too. 
                                                              Swang ke Chawal


Ingredients for making swang ke chawal -
  • Swang ke chawal (Samwat) – 1/2 cup
  • Potato diced into small pieces – 1 large
  • Black Salt as per taste
  • Water – 3 cups
  • Ghee – 1 tablespoon
  • Red chilli powder – 1/4 teaspoon
  • Cummin Seeds – 1 teaspoon
  • Coriander Leaves for garnishing ( optional)
  • Cloves – 2
  • Cinnamon Stick – 1 piece
Method for making swang ke Chawal -
Take a heavy bottom pan, heat ghee in it and add cloves, cinnamon,cummin seeds and let it fry for few minutes. Then add diced potatoes to it with salt. I let this cook for a while to let the potatoes fry little more and become crispy.Now add rice, water,red chilli powder and let it cook on low flame with covered lid for 10 – 15 minutes. keep checking in between. Cook on low flame till rice absorbs the water and rice is properly cooked. Garnish with coriander leaves and serve hot with the sabzi.

                                                                     Aloo ki Sabzi


Ingredients for making Aloo Ki Tari wali Sabzi -
  • Potatoes boiled – 2 – 3 large
  • Tomato puree – 2 medium
  • Cummin seeds – 1/2 teaspoon
  • Salt to taste
  • Turmeric Powder – 1/2 teaspoon
  • Red Chilli Powder – 1/4 teaspoon
  • Dry Dhaniya powder – 1/2 teaspoon
  • Garam Masala – 1/4 teaspoon
  • Ghee – 2 tablespoon
  • Water – 1/2 cup
Method for making Aloo Ki Tari wali Sabzi -
Take a heavy bottom pan, heat ghee in it and add cummin seeds, let it fry for few seconds, then add all the dry spices to it along with the tomatoes puree. Let this cook on low flame for 7 minutes or till you see the pan leaves ghee from the sides and puree gets cooked. Mash the potatoes with hand and add to the pan , mix well and add water to it. Cook it on medium flame till water gets one boil, then lower the flame and continue cooking for another 5 minutes.  Serve hot with vrat ke chawal or kuttu ki puri.
