Spaghetti in Red Sauce Recipe

 
 
Easy and Quick Recipe of Spaghetti in Red Sauce. I don’t like complicated cooking. I love to keep my recipes simple and quick most of the times. This Red Sauce and Spaghetti recipe is one of those simple and quick cooking recipes. I make this often at home for my kids.
 

I always prepare the pasta in Olive Oil but you can use any refined oil of your choice for this recipe. It is extremely easy to prepare this Red Sauce and my kids love having the Pasta in this Sauce. Though they also like Pasta in White Sauce but most preferred at home is this one.
All you need is few tomatoes, onion, mushrooms, garlic paste, dried herbs (parsley & oregano) or fresh basil leaves, olive oil and parmesan cheese for topping your Spaghetti. Doesn’t it sound super easy. I am sure many of us normally have all these in our kitchen most of the times. So why wait, let’s get going.

Spaghetti With Creamy Tomato-Mushroom Sauce Recipe
 
Ingredients
  • Tomatoes - 5-6 (puree)
  • Extra Virgin Olive Oil - 2 Tablespoon plus little extra for serving
  • Onion - 1
  • Mushrooms - 100 grams
  • Garlic paste - 1 teaspoon or garlic cloves - 3 approx., sliced into chunks
  • Salt to taste
  • Black Pepper - 1/4 teaspoon
  • Red Pepper Powder - 1/4 teaspoon
  • Fresh Basil leaves - handful or fried herbs
  • Parmesan cheese - grated for serving - Optional
  • Fresh Cream - 2 tablespoon - Optional
  • Spaghetti - 500 grams
Instructions
  1. ~ For the Red Sauce -
  2. Take a pan, add olive oil and when hot add in chopped onions.
  3. Saute until they soft and translucent in color.
  4. Now add in garlic paste and stir.
  5. Add in sliced button mushrooms, cook covered for 7-8 minutes. Stir in between, when soft you are ready for next step.
  6. Now add in pureed tomatoes to the mixture and cook on low flame.
  7. Allow to cook for 10 -15 mins on low flame, stir in between so that it doesn't stick to the pan.
  8. Add in salt and black pepper.
  9. When the mixture starts to leave the sides of the pan then move to next step.
  10. Add in the fresh cream now and stir continuously for few seconds. This is optional, if you don't add the cream, the red sauce will taste equally delicious.
  11. Do not over cook this sauce, it has to be fluid consistency but not too loose.
  12. Now add in fresh basil leaves and mix,
  13. Red Sauce is ready.
  14. ~ To cook Spaghetti
  15. Take a big pan, add enough water and boil it.
  16. Once water starts to boil, add in the pasta and little salt.
  17. Mix using a fork.
  18. Allow to cook pasta in boiling water for 7 mins.
  19. Check by using a fork, if pasta is soft and cooked.
  20. Drain it in a strainer and remove all excess water.
  21. Let it rest for few mins.
  22. ~ Now serve the cooked Pasta Spaghetti with red sauce and add in some basil leaves and grated cheese. Sprinkle some extra virgin olive oil on top of it. I was running out of fresh basil leaves so I used dried mixed herbs on top of my spaghetti.
